Spicy Garlic Asian Chicken By: Emily Short
My Spicy Garlic Asian Chicken recipe was invented by accident. When I was younger my favorite meal was made by a family friend. It was a spicy Asian chicken that was coated in a red sauce and had the best flavor. I spent years attempting to recreate the recipe but failed. I did not and still do not have access to the ingredients used nor is there any written record of ingredients or measurements. However, I still tried. Always creating a decent dish but never resembling what I had as a child.
Failing to recreate the recipe turned out okay because what I did accomplish was creating my own recipe that has since become a family favorite. My husband and children love this Spicy Garlic Asian Chicken and request it several times a month. My husband even makes it for his fire guys at the station who seem to approve. It is a simple recipe and tastes great. Let’s get cooking!
First you are going to gather your ingredients. You will need vegetable/olive oil, chicken, chili garlic sauce, minced garlic, soy sauce, ginger, sesame oil and brown sugar. For toppings you will need green onions and sesame seeds.
Next step is preparing the sauce. You are going to mix the soy sauce, minced garlic, garlic chili sauce, ginger, sesame oil and brown sugar into a small bowl. Set aside. To adjust how spicy it is, increase or decrease the chili garlic sauce. It is a potent sauce so adjust sparingly.
Now you are going to cut the chicken. The chicken should be cut into bite sized pieces, approximately 1 inch. If you are super picky like I am, you can cut off pieces of fat, veins, etc.
Turn your stove to medium heat. Using a large skillet you are going to put some olive oil in the bottom. Once the skillet is warm, spread your chicken out evenly. Stirring occasionally until thoroughly cooked.
Mix in the sauce. Once the Chicken is complete you are going to stir the sauce once more as some of the sugar may have settled. Then pour the sauce over the chicken. Ensure to coat all the chicken. Lower the heat and continue stirring occasionally until the sauce thickens.
**To make it baby friendly, pour half the sauce and just leave it for a minute or so before removing the baby’s portion of chicken. I then pour the rest of the sauce and continue the recipe for everyone else. Green onions are great for babies. Some believe that onions even help with teething pain and they seem to love them!
Remove the chicken. Once the sauce has thickened remove it from the heat. Serve over a bowl of rice or lo mein. Top with some green onions and sesame seeds and voila! Enjoy!
